Pasta of all kinds was a staple on our show. 


Stove top tip…. When you’re boiling the water to cook your pasta, add a touch of olive oil to the water and that will prevent the pasta from sticking.  When using olive oil, we suggest the extra virgin kind. Extra virgin olive oil is the first oil that comes through when the olives are pressed in the manufacturing process…

 Chicken Fettuccine

                                    What You'll Need:

 

2  bonelses, skinless chicken breasts       6 strips of bacon

1 red pepper                                     1 green pepper (cut into strips)

1 onion (chopped)                            1 tablespoon garlic

1 can tomatoe sauce                     Parmesan cheese

large fry pan                                 1 package Fettuccine pasta

 

                                     How to Prepare This:

Cut chicken into ½ inch cubes and cook pasta according to package instructions.  In a large fry pan, cook bacon until crispy. Now add chicken. Once the chicken is looking partially cooked, add onions, peppers, and garlic.  Once that is looking cooked, add your can of tomato sauce and stir. Cook and keep stirring until done. Spoon sauce over pasta , sprinkle with Parmesan cheese.

 

(Chefs & Stirrers: This is a great fast dish for those nights when you've had a killer day at work and could care less about making dinner. This is quick and easy....something we know a lot about...)

 Chicken Macaroni & Cheese

                                   What You'll Need:

 

16 oz. of the pasta of your choice (see notes below)

1 3/4 cups sliced mushrooms          1 medium tomato (diced)

½ onion (finely chopped)            1 tablespoon crushed garlic

½ boneless, skinless  chicken breast (diced)

                   4 tablespoons olive oil

½ cup milk                                       1 teaspoon salt

¼ lb. cheddar cheese                      ¼ lb. mozzarella cheese 

 5 or 6 slices of jalapeno (chopped)     shallow baking dish  

  wok or fry pan                                 2 cups broccoli buds

                                  

                           How to Prepare This:

 

Cook pasta according to package directions.

In a large wok or fry pan, heat 3 tablespoons of oil and add diced chicken. Cook until golden brown.  Next add onions, jalapeno, and garlic. Cook until onions are transparent. Now add chopped tomatoes and milk. Keep stirring and cook for one minute. Turn off heat. Steam broccoli in steamer for 3 to 5 minutes until the cheese melts. .

 

When all is finished, take your baking dish and rub one tablespoon of oil on bottom. Now place a layer of broccoli, sprinkle a layer of cheeses, then chicken mixture, now pasta. Repeat this process until you've filled the baking dish. Finish with a layer of mixed cheese.  Bake for 5 minutes at 450 degrees.

 

(Chefs & Stirrers: To make your dish more interesting, get creative with the pasta you select. There are pastas shaped like wagon wheels, bow ties, hearts, boobs, and other anatomically correct objects.... depending on where you shop...)

Macaroni & Cheese Supreme

                                         What You'll Need:

 

1 lb. Italian sausage             1 can sliced black olives

1 lb. elbow macaroni           ½ lb. sliced mushrooms

½ stick  of margarine              1 package frozen carrots

1 head of broccoli                      1 tablespoon olive oil

1 lb. grated Jack cheese            1 shallow baking dish

large fry pan           1 lb. of grated sharp cheddar cheese

 

                                        How to Prepare This:

 

In a large fry pan place Italian sausages and cook until brown. Once cooked, cut into bite size pieces.  At the same time cook macaroni according to the package instructions. When the macaroni is cooked, drain water and place pasta back in the pot adding margarine and pepper to taste and mix well.

 

In a separate saucepan, boil carrots. Chop broccoli into bite size pieces and steam in a steamer until broccoli tender.

 

Now that the sausage is done, add your olive oil and mushrooms and keep stirring.

 

Once all the ingredients are cooked, you are ready to assemble your casserole. Place a layer of jack cheese on the bottom of your baking pan. Next, add cheddar, then macaroni, carrots, sausage, mushrooms, and broccoli. Continue this until casserole is completely full ending with a layer of mixed cheeses and garnish with olives. Bake for 10 minutes at 350 degrees.  Enjoy!

Mexican Style Chicken Pasta

                                  What You’ll Need:

 

4 cups chicken broth                            1 tablespoon olive oil

1tablespoon crushed garlic                ¼ teaspoon salt

1lb. Boneless,skinless  chicken breasts (cubed)   

        1 teaspoon cumin

4 oz. can of chilies                         ½ teaspoon chili powder

¼cup cilantro (chopped)          6 canned tomatoes drained

1 green pepper (chopped)          ¾ lb. Vermicelli pasta

 

                                  How to Prepare This:

 

In a large saucepan bring broth to a boil and add garlic, cumin, chili powder, and chicken. Keep stirring. Now take your pasta and break it in half to make it easier to handle. Heat a bit of oil in a large fry pan and place pasta in pan

Be sure and stir the pasta so it doesn’t burn. Cook until pasta is brown and then transfer to broth mixture.  Add more oil to skillet and start to sauté peppers, cilantro, and canned chilies. Once cooked, add them to sauce pan mixture. Simmer this mixture until pasta is done and serve on a large plate and garnish with cilantro sprigs.

 

(Chefs & Stirrers: We had quite a time with this recipe on our show. Frying pasta was a new one for us and it got everywhere! So be prepared!)

Sausage Lasagna

                                  What You'll Need:

 

1 package Lasagna noodles                  1/3 cup olive oil

½ cup onions (chopped)                      2 cups tomato sauce

½ cup chicken broth                         ½ teaspoon salt

¼ teaspoon black pepper                1 lb. Italian sausage

1 lb. Mozzarella cheese                  large fry pan  

½ cup Parmesan grated cheese    long shallow baking dish

                 

                                   How to Prepare This:

 

Cook lasagna according to the instructions on the package. Drain and place on the side. (We suggest you place the noodles on wax paper so they don't stick together. Spread them out. ) 

 

Next, in a large fry pan place sausage and sauté with onions and olive oil. (Sausage should be cut into bite size pieces)

 

Once onions are transparent and the sausage looks cooked, stir in tomato sauce, chicken broth, salt, and pepper. Let this simmer for about 10 minutes and keep stirring.

 

Take a shallow long baking dish and spoon some of the sauce on the bottom. Next place a layer of Lasagna noodles, then a layer of Mozzarella cheese, followed by another layer of sauce, Lasagna, and Mozzarella. Continue this until you have enough layers to fill your baking dish. Let your last layer be Mozzarella and then sprinkle Parmesan cheese on top. Bake in the oven for 30 minutes at 350 degrees. Cheese should be completely melted and bubbling hot.

 Southwest Lasagna

                                   What You'll Need:

 

2 medium onions (chopped)               2 tablespoons olive oil

2 tablespoons crushed garlic         ½ tablespoon salt

28 oz can of whole tomatoes            large fry pan

1 tablespoon cumin powder             1 lb. cottage cheese

3 tablespoons chili powder             1 lb. Lasagna noodles

3/4 lbs. grated Parmesan cheese       large shallow baking dish

1oz can chopped mild green chilies                          

 

                                How to Prepare This:

 

In a large fry pan, heat oil and sauté onions and garlic. Cook until the onions are transparent. Now add the tomatoes including the juice. Add the green chilies, chili powder, cumin, salt, and pepper.  Bring to a simmer stirring constantly for about 5 minutes. Next, reduce the heat and cook uncovered for about 10 minutes and remember to keep stirring periodically.

 

Meanwhile... cook your Lasagna noodles as per the instructions on their package. Once they are done, drain water and lay them out on wax paper so they don't stick together. Pre heat your oven to 350 degrees.

 

To assemble, place a layer of sauce on the bottom of the pan to prevent burning or sticking. Now place a layer of Lasagna, cottage cheese, then grated cheese, Lasagna noodles, and sauce. Continue this layering process until the pan is full ending with a layer of cheeses. Bake for about 35 minutes and let stand before cutting about 15 minutes.

(Chefs & Stirrers: This is a great new twist to an old idea. As a casserole it can be served for several days or until your family is tired of seeing it!)

Spaghetti & Meat Sauce

                                  What You'll Need:

 

½ lb. bacon                                   3 medium onions (chopped)

2 lbs. ground beef                  2 tablespoons crushed garlic

1 teaspoon basil                   ½ teaspoon cayenne pepper

½ teaspoon crushed red pepper       16 oz. can tomato sauce

8 oz. can tomato paste                       1lb Spaghetti

2 teaspoons salt                                large fry pan

large pot

 

                                       How to Prepare This:

 

In a large pot boil your Spaghetti according to instructions on package. Once cooked, drain and place in a bowl.

 

Cut bacon into ¼ inch pieces, cross-wise. In a large fry pan place bacon and cook until crisp, add diced onions. Cook until onions are transparent and then add ground beef, 2 teaspoons salt, 1 teaspoon basil, ½ teaspoon cayenne pepper, ½ teaspoon crushed red pepper. Cook until meat is brown and then add the tomato paste and the can of tomato sauce. Cook for about 20 minutes on a low flame. Keep Stirring!  

 

Serve over cooked pasta.

 Vegetable Rotini

                                  What You’ll Need:

 

1½ cups dry corkscrew (Rotini) pasta

2 carrots (sliced)               1  green pepper (chopped)

½     cup milk                      1  tablespoon mustard

3 tablespoons olive oil       large fry pan

1  can (10-3/4 oz.) condensed cream of celery soup

½  cup shredded cheddar cheese (2 oz.)

1  cup broccoli                    Frying Glasses

                           How to Prepare This:

 

Boil Rotini as per instructions on the pasta package. In a large fry pan, place three tablespoons of olive oil and when oil is hot, add peppers. Keep stirring for about 5 minutes and then add carrots and broccoli. Always keep stirring on medium heat. When veggies are tender, add in milk, mustard, and can of soup. When everything is mixed up, pour over pasta in a large serving dish. Top with shredded cheddar cheese.
